London's burning!! the stock markets are crashing! the USA are being humiliated! The euro is sliding (maybe my UK pension will acquire some value then...).
But no matter - who cares - I have discovered Labneh! And it's easy. To hang a tub of yoghurt in a nappy over a sieve for 24 - 48 hours seems fairly relaxed to me, as cooking goes. For English speakers there is a recipe from MariannaF, which is a bit more complex. Marianna thinks coffee filters are fine for making this, too. Apparently, labneh just means "milk" in Arabic. It's drip-dried yoghurt. I had my first Labneh for lunch, with chives, and a home-made meatball. Heaven.
