Gestern abend habe ich spontan noch schnell eine Nachspeise hergezaubert, die Lust auf was Süßes motivierte mich!
Zitronencreme: halbes Pfund Quark, Saft einer halben Zitrone und geriebene Schale (Bio natürlich)mit je nach Bedarf ein,zwei, mehr Löffel Puderzucker mischen,und einen halben Becher geschlagenen Rahm drunterziehen.
Die Plätzchen mache ich anarchisch, die werden jedesmal anders. Letztes Mal hab ich sie mit Rohzucker gemacht, da wurden sie knusprig, diesmal mit Puderzucker, da sind sie dann ganz glatt und pulverig. Das Prinzip ist ca. 100g Butter mit Mehl und Zucker verkneten, wie Streusel, die Menge an Mehl smchätze ich, bis der Teig nicht zu fett aber auch nicht zu fest ist (ca. 200g). Beim Backen aufpassen, die sind schnell fertig! Glasur aus Puderzucker und Zitrone schön langsam reinrühren. Essen!

When we came home late last night I whipped up a quick dessert, my tried and trusted lemon fool - which is foolishly easy to make, and some dry biscuits to dip in it.

Lemon fool: mix 1/2pound of quark with two (or more, up to you and your sweet tooth) spoonfuls of icing sugar, juice of half a lemon (the other half will make the icing for the biscuits). Grate some lemon zest into it, fold in half a tub of whipped cream. Eat.
Biscuits: a variation on shortbread, knead a piece of butter, about 100g, with sugar to taste, maybe 50g. This time I used icing sugar, which made them firm and smooth, last time I used demerara and they were all crunchy. Mix in about 200g white flour, gradually, so you can stop before the dough becomes too floury. I baked them in a muffin tin, just a ball of dough in each hole. watch - they are done very quickly.
Icing is icing sugar with drops of lemon juice - like making mayo.
