When I read about heat-waved USA, am deeply grateful for all that rain we are having. I love going for a walk in between showers, watching the clouds and the occasional rainbow. But all that post-Novemberish rainy weather we are having made me want to bake cookies, out of season. My favourite quick ones are a shortcrust pastry I make with
125 cold butter60g icing sugar
This time i mixed in some chocolate chips hacked from a bar that was, miraculously, still lying around. Cool the dough and preheat the oven to 160°C.Roll a sausage with the dough, cut slices and put your thumb-print on them. Space them out on baking paper and bake. Watch closely - they are done before you have gone and written your blog. And you never have to buy industrial cookies with all their trans-fats again.
