Omelette mit Gittermuster

Stimmt, ich sagte Okonomiyaki. Dann habe ich bemerkt, dass ich das Rezept ja schon mal gepostet habe. Weil es soo schön ist,  zeige ich auch mein jüngstes Wunsch-Omelette mit Pfifferlingen, Tomate und Estragon aus einem Garten im Weinviertel. Köstlich.. und bitte macht die Mayonnaise selber. Einfach, und es ist so ein Spaß! So geht es: ein Eigelb mit etwas Salz, etwas Öl und wenn man will einem Spritzer Zitronensaft und Senfpulver mit dem Zauberstab mixen. Dann ganz langsam Öl dazugeben bis die richtige Dicke erreicht ist. Fertig.

I love the name of these Japanese omelettes, okonomiyaki. It rolls off the tongue, it looks great and tastes so good. I made this one with chanterelles, tomatoes and tarragon. And the mayonaise for the pattern is, of course, homemade: one egg yolk, salt, if you like, a squeeze of lemon and some mustard powder, a couple of fingers of vegetable oil - start blitzing with the hand mixer. Now, carefully add more oil until the consistency of the mayo looks right. Done!
Ansonsten habe ich noch ein paar Bilder aus dem Weinviertel, von der hübschen Kellerstraße im nahe gelegenen Dorf.
Danach geht es nämlich in die entgegengesetzte österreichische Richtung, in den Bregenzerwald, zu unserem jährlichen Yogafest. Schaut auch bei salamandra.de rein!

These are impressions of one of the many little villages in Austria's wine country, the lanes where the wine is made and served to the public. I missed these "open cellars", unfortunately. 
My next trip took me to the opposite end of Austria, near the Swiss border, where we meet with the yoga group once a year. (pictures now up on salamandra.de)

  2. Oko wie? Ich sag Palatschinke! Schon schön, die Weinviertler Kellergassen, nicht? Und ich bin grad wild auf Wasabimayonnaise. Sehr zu empfehlen. Die Vorarlberg-Fotos sind sehr wildromantisch, Sturm in den Bergen, da schepperts sicher ordentlich. Liebe Grüße von Bettina, derzeit Wien genießend.
