Maxivida who is reproducing her Serbian grandmother's entire recipe book, I spontaneously made a Sachertorte for my homecoming hero. I followed a simple recipe from an Austrian cookbook which requires merely 8 eggs - separated, the whites beaten with 50g sugar and the yolks whisked with 100g icing sugar. Melt 150g dark chocolate with 150g butter (I used to say unsalted, but with the fashion for salty sweet things I say don't bother), then fold every thing together, including 150g plain flour and a pinch of salt. With a nod to Maxivida, I sneaked in a cupful of ground walnuts.
