Clafoutis, no amoi!

I made a clafoutis - which is really dead easy, like a sweet toad-in-the-hole. Butter the pie dish (my lovely pale blue one from England), put the fruit of your choice in (I used gooseberries) and pour a pancake mix of 3 eggs, 250 ml milk mixed with buttermilk, 4-6 spoonfuls flour, 3 spoonfuls sugar and vanilla sugar, all whisked together, over the fruit. Then bake at 160°C for about 40-45 minutes until browned. I tried to be clever and used only buttermilk. Don't. It makes the pastry rubbery instead of fluffy.
