Samstag Kartoffeltag

Has anyone out there successfully made gnocchi? do you even know how to pronounce gnocchi? Millions of Italian housewives have made them over the ages, but they must know something I don't (see the result below). Transformed into little fritters like my Granny used to make them, they came out deliciously, and the leftovers, more fritters, were served with a mushroom sauce: chanterelles fried with onions and parsley and topped up with cream.

  1. I do know how to pronounce the word and have successfully made them myself, although I did cheat. Because I can't be bothered with potatoes (we hardly eat any potatoes because I hate the peeling process) I use the Kartoffelpureeflocken to make gnocchi. Give it a try - you'll be surprised. Just use half of the amount of fluid suggested by the recipe on the box - let the mixture cool a little so you can knead it and add about a cup of flour. And keep adding the flour and kneading - the dough needs to stop sticking to the board but it shouldn't be too hard. cut into the small pieces, roll into gnocchi with a fork and cook in salted water. ecco!
