Polenta

Ein Arme-Leuteessen für die Norditaliener, eine Foodiespezialität chez nous: die Polenta. In Italien wird sie ja gerne mit Kaninchen gegessen, ich mag sie ganz arm, mit einer einfachen Tomatensoße. Da ich dem Rezept nicht glaubte (125g Polenta langsam in einen Liter kochendes Wasser einrühren - Leute,das REICHT für zwei!!) machte ich viel zu viel. Aber es gibt zwei Möglichkeiten der Weiterverwertung. Ich habe aus Versehen weichen Maisgrieß gekauft, der schmeckt dann wie Grießbrei, und die kalte Polenta läßt sich herrlich als Grießschnitten braten - mit Zimt, Zucker und Apfelkompott. Variante 2 fand ich bei Jutta Loorbeerkrone: ich rührte die feste Polenta in den Eintopf, wo sie sich brav wieder auflöste. Sehr fein für die kalten Novembertage.
Polenta: also, am besten den groben Maigrieß nehmen, 10 Minuten einrühren s.oben und dann von der Hitze wegnehmen und stehen lassen. Man kann die Polenta dann so essen, oder im Ofen mit Olivenöl und Käse (Parmesan oder Mozzarella) überbacken.
Sugo: Zwiebel(n), Knoblauch, Oregano und Chilischote (erstmal mit wenig anfangen) in Olivenöl anschwitzen. Eine Dose geschälte Tomaten oder stückiges Passato drauf, und einen Esslöffel gutes Tomatenmark reinrühren. Köcheln lassen, je länger desto besser.Dazu gibt's was Grünes - Brokkoli, Feldsalat oder Rosenkohl.

Polenta is the poor people's winter food in Northern Italy and a foodie favourite in gastro pubs. The not so poor eat it with rabbit stew, I quite like it with tomato sauce. I didn't quite follow the instructions on the packet, it said "125g Polenta for two". Believe me, it is enough. Now I have shitloads of soft polenta , as I bought fine maize instead of the rougher stuff- next time I will try the rough polenta maize. It tastes good though, and the leftovers are perfect for fried slices with cinnamon and stewed apple. I will also make a stew with Borlotti beans and white cabbage, stirring in the cooked polenta, as recommended by an Italian specialist. so - eventually, it will all be eaten.
For the polenta, pour 125g of rough polenta meal into a litre of boiling water, stir for ten minutes and then just leave it to settle - off the hob. It can be eaten as it is now, or you pour it into a mould, grate parmesan (I used mozzarella) and nutmeg over it and bake until it's crisp. For the tomato sauce, brown one or two onions, some chopped garlic and oregano with as much dried chili as you can stand (you have to try it out, there is no measure).  Add a tin of chopped tomatoes, if you want lots of sauce, two, and a dollop of tomato puree. Simmer for a while, the longer the better.
On the plate, add something Green - like broccoli, lamb's lettuce or (be brave!) sprouts. For photographers: broccoli keep their fresh green colour if you put them under cold water v. briefly when they are done.
And here is the polenta dressed up as pudding, fried in some butter, dusted with cinnamon and sugar.

  4. Witzig - ich hatte am WE auch die Idee, Polenta zu verfertigen. Hab sie nach Anleitung auf der Tüte gemacht, in eine Bäbenform gefüllt und eine Nacht im Kühlschrank gelassen. Davon briet ich dann Scheiben in Butter und dazu gabs Gemüse in Erdnußsoße. Mmmmh...
    Danke für den Tip, Polenta auch mit Süßem zu essen, das probier ich auch noch aus!

  5. conny - die bäbenform musste ich googeln. Ich dachte erst das sei Schweizerdeutsch, ist aber sächsisch. Ich liebe so regionale Begriffe.

  6. Wenn die kalte Polenta nochmals in groben Polenta gewälzt und sodann gebraten wird, ergibt sich eine wunderbare Kruste.
