The contents of my fridge were desolate yesterday, a beetroot, a bunch of spring onions and a dollop of dolcelatte. Weather too horrid to venture out. Creativity was required and found, and so was pasta. I boiled the beetroot prettily on the stem and sprinkled it over a plate of tagliatelle (lunch) and pappardelle, cooked in the beetroot water which somewhat unexpectedly turned it orange (dinner). The sauce was sliced spring onions sautéed in olive oil and saucified with the dolcelatte. Highly recommended!
