It is quite possible that I am the last cook on earth who discovered that pesto can be made from virtually anything green and anything nutty. Today I had a brainwave looking at my pea-shoots - they keep shooting and crying out to be used. I cut a handful of them and blended them with some elderly pistachios (toasted in a dry pan and ground in a coffee grinder), a dash of olive oil and some crumbled parmigiano. There is no recipe, these are the kind of things you can try at home - I did.
I ate this rather fine pesto with my remaining, frozen, home-made ravioli. This is the kind of lunch I make for myself - quick, simple, wholesome, delicious. Followed by a crunchy walk in the snow to our swimming lake, which is frozen solid. It should be quite a few weeks before even the toughest gal (=my sister) swims in there!
