Great expectations

All shall be well, and all shall be well and all manner of things shall be well.

I guess English readers will be familiar with the mantra of Julian of Norwich:
All shall be well, and all shall be well and all manner of things shall be well.
This is what I am praying at the moment, as my cold lingers and my trip to London becomes imminent. But I am looking forward to a quiet few days in our wonderful loaned garden flat before the full social whirl engulfs us. We're not going to London only to watch TV and sit in the garden. after all. There will be a reunion with my "kids" I worked with some 35 years ago. There will be a wedding and my Hungarian friend's 50-years-in-London party.
There will be trips to the seaside and dinners and swimming.... I hope.
So all will be well. If it ends well.

Wer lieber Zitrone-Mohnkuchen mag, rührt hier 3EL Mohn rein.

The recipe for this lemon wonder is really simple:
Preheat the oven to180˚C, butter and flour your loaf tin. I also made six scalloped muffins in a tin I had forgotten I had, and added sugar to the buttered tins.

Beat three large eggs with some vanilla extract (or vanilla sugar) and 60ml milk.
In another bowl, mix 210g flour, 150g sugar, a teaspoon of baking powder, a pinch of salt, (add three tbsp of poppy seeds if you like) and the zest of an organic lemon.
Fold 200g melted or very soft butter and half the beaten eggs into the flour mix, then slowy add the remaining eggs. Spoon the batter into the cake tin and bake for 50 minutes, checking occasionally with a tooth pick whether it's done. Cover the cake with baking paper if it browns too quickly.
Make a bowl of icing by mixing icing sugar with lemon juice.
When the cake is done and cooled down a bit, poke little holes in the cake and drizzle the icing all over it.
And this one is for someone special up in Scotland: an (almost) vegan rice dish
Cut potatoes into wedges, an aubergine into thick slices
stick them in the oven doused with olive oil, rosemary and salt
at the same time, stick a red pepper in the oven until it blackens
put it into a plastic bag, makes it easy to peel
Wash your rice in lots of water and boil it, chuck some frozen peas in for something green
Mix horseradish with a grated beetroot for colour effect and very healthiness
cut the red pepper into strips and dress it with a bit of oil and lemon juice (save some for later with toast and humus)
Pile it all on a plate.
Crumble feta over it if you are not a vegan.
You can of course leave certain things out!
But it's delicious.

So delicious!

  7. I wish you the best on your visit to England.
Are you sure there is no place for me in your suitcase? I am looking forward to revisiting that important country in my life and it seems I will never be able to do so!
All your dishes look always delicious, but I am not very keen on sweet desserts and I'd rather cook your plate of potatoes and aubergines and red pepper and whatever I may find in the fridge!

    1. I'm always amazed there are people who don't like sweet stuff... glad you are finding something, anyway! And why on earth couldn't you come back to England? I'm planning to outtravel Brexit!
