Soulfood: Backen geht immer

Lachen geht übrigens gut, ich habe plötzlich so viel entspannte Zeit, mir auf youTube alte Lieblingssendungen anzuschauen und wie eine Schwachsinnige vor mich hin zu kichern.
Da ich eh einem Backenhörnchen ähnle, bekam ich heute Lust zu backen. Und zwar nochmal die Dampfnudel. Mit demselben Rezept, allerdings nahm ich aus Versehen das Pastamehl, hat aber nicht geschadet - und derselben Methode, gelang mir dieses Mal so eine Art Briochekuchen, locker und weich, perfekt für eine Zahnsituation, bei der  "richtiges" Brot ausgeschlossen ist.
Diese Dampfnudelbrioche hält tagelang und ist perfekt für French toast (Arme Ritter).
Die Vanillesoße hatte ich eingefroren, sie ließ sich problemlos auftauen und wieder verwenden, nachdem ich noch ein bisschen Stärkemehl und Zucker mit Milch anrührte und sie damit kurz aufkochte. Leider ist dabei der Milchtopf angebrannt, aber den kriege ich schon wieder sauber, wie so viele vor ihm, mit der Methode Waschpulver.

Except bake. I can't eat my usual bread so I suddenly knew I had to get up and bake those steamed yeast dumplings again. This time they turned out like the finest, crumbliest white brioche bread, which I ate with custard - perfect for toothless days like these.
Try this recipe for a super easy brioche:
Put 250g plain flour in a large bowl, make a hollow in the middle. In this you put 20g fresh yeast or a packet of dry yeast (7g), a couple of spoonfuls sugar, a pinch of salt and enough warm milk to make a little dough with a fork.
Leave this to rise while you watch an episode of Third Rock from the Sun, for example.
Then fold in two eggs (beaten with the zest of an organic lemon), and 60g soft butter, salted or unsalted, doesn't matter.
Now make a serious dough (I do it with my hands, but you can use your Kitchenaid), kneading, mixing in more warm milk, until you get a supple ball. Let it rise again again for an hour or so.
Roll the dough into a sausage shape and cut about six slices, with which you form individual balls.
Sit the balls in a buttered heavy-bottomed pan (something like Le Creuset) or a cake tin (cover it with tinfoil). Drizzle a bit of warm milk in which you melted a tbsp of butter over your balls and bake them in a preheated oven (180°) for about 40 minutes (check after 25 minutes).
By the way: this brioche keeps for days and is perfect for French Toast!

  1. boah, schaut des lecker aus! meine zahnsituation bräucht es nicht, aber ich steh trotzdem auf so weiche, flockige dinger!
    und das is DIE idee für morgen, wenn der sohn wiedermal heimkommt...

  3. Was ich schön finde (und komischerweise entspannt mich das sehr), dass bei Dir das eine oder andere nicht so ganz gelingt oder eben was vergessen oder verwechselt wird...
    Hier nebelgrau und null Grad. Bestes Wetter für nach dem Spaziergang aufs Sofa, Heizung wärmt, Kerze an, lesen und einen feinen Kuchen zelebrieren.
