Gnocchi und andere Unfälle

Neulich habe ich Gnocchi gemacht. Dachte ich jedenfalls. Anfangs alles super, die Kartoffeln mehlig (wichtig), der Kürbis schon ausgedampft. Ich bekam einen Teig her, den ich gut rollen konnte. 
Mein erster Versuch, 2009, war eher eine Katastrophe. Eine Blogkollegin gab mir den guten Ratschlag, mit Kartoffelpüreeflocken zu verdicken. Habe ich ausprobiert, war auch nicht die Lösung.
Ich bin altmodisch und arbeite gerne mit natürlichen Zutaten, aber manchmal kann man auch ein bisschen nachhelfen, und es klappt besser. So wie hier.
The other day I thought, hey, I'll make gnocchi again. After all, in the past I have managed to proceed from potato fallout to decent, firm gnocchi. (don't call them nyotchi, by the way, they answer to the name nyocki).

In one of the comments I found this advice: "I do know how to pronounce the word and have successfully made them myself, although I did cheat. Because I can't be bothered with potatoes (we hardly eat any potatoes because I hate the peeling process) I use the dried potato flakes to make gnocchi. Give it a try - you'll be surprised".  I tried, and I was very surprised.
Somehow, I am old-fashioned and like to use the real thing - potatoes. But sometimes it's good to cheat - instead of flour use potato flakes, it can make a difference! This time, I didn't and look what happened!
Was macht man, wenn man völlig formlose Gnocchi aus dem Wasser fischt? Kartoffelpuffer braten!
Sehr köstlich angerichtet mit Spinat und einer Sauce Hollandaise mit Petersilie und Kurkuma. Kann man kaufen, aber auch einfach selber machen.
What do you do with a sieve full of shapeless potato and pumpking monsters? Reshape them into potato fritters, and serve with something green (spinach) and a tasty sauce. I seasoned a hollandaise sauce - if you buy it , buy Maille, but it's easy to make yourself - with turmeric and parsley - bingo.

  1. Ich kämpfe auch immer noch mit den weichen Gnocchi, aber irgendwie werden sie dann doch. Es ist ein bissl besser, wenn ich die gekochten Erdäpfel und den Kürbis durch die Erdäpfelpresse auf ein Backblech (+ Papier) presse und im Rohr bei ca. 180° noch ausdampfen lasse. Und mit dem Mehl nicht lang kneten.

    Aber deine Puffer gefallen mir auch, nicht nur, weil sie so schön farbenfroh sind!

  2. Ja, Kartoffelpresse ist gut! Und auch der Tipp von Friederike, nicht lange zu kneten, sollte beherzigt werden. Auf jeden Fall: Deine Gnocchi-Puffer würde ich liebend gerne essen ... Krieg schon wieder Hunger ;-))) Liebe Grüße!

  5. Ich hatte bis vor 2 Jahren noch nie Gnocchi gemacht, dann musste ich aber, denn mein Sohn vertrug das Gluten nicht. Also nahm ich glutenfreies Mehl - und sie wurden super! 3 große Behälter habe ich eingefroren und die ganze Familie liebte diese Gnocchi...
